Today I am going to share a recipe that may reshape your opinion of Banana Bread. This recipe has a secret ingredient that kicks up the flavor and moisture. It is so good that my sweet father would go buy all the ingredients and have them casually waiting on the kitchen counter when I would come home for vacations during college. A subtle hint, in case I needed something to do. Want to try it?
RECIPE:
3 C. flour 3/4 tsp salt 1 tsp baking soda 2 c sugar 1 tsp cinnamon 1 c chopped pecans 3 eggs, beaten 1 c vegetable oil 2 c mashed ripe bananas (I say add MORE, like 3 c) 1 small can ( 8 oz) crushed pineapple, drained (…aha…the secret ingredient!!) 2 tsp vanilla extract (I tend to pour a little heavy on the vanilla, isn’t more always better?!)Preheat oven to 350. Combine 1st 5 ingredients. Stir in pecans. Combine remaining ingredients, add to flour mixture. Stir until dry ingredients are moistened. Pour into 2 greased regular sized loaf pans, cook for 1 hr and 10 min.
