Honeycrisp Apple Salad

Perfect for fall menus, this Honeycrisp Apple Salad transcends expectation. It’s not just the medley of honeycrisp apples and candied pecans, nor the nuanced dance of flavors, but rather the secret sauce that ties it all together: the dressing. which transforms mere ingredients into an unexpected revelation. Ingredients

DRESSING:
1/4 cup apple cider vinegar
2 1/2 tbsp honey
1/4 tsp cinnamon
1/2 tsp black pepper
1/2 tsp salt
pinch of curry powder
pinch of cumin
1/2 c olive or avocado oil
SALAD:
baby arugula
1 honeycrisp apple, matchstick cut (julienne cut)
candied pecans *

Instructions

Whisk dressing ingredients and refrigerate until use.
Mix baby arugula with matchsticked honeycrisp apple and candied pecans. (you can scale the size of the salad to your preference or crowd). Do not chop the apples too far in advance because they will oxidize and turn brown. If you are inclined to chop them in advice, soak them in lemon water to prevent this.
Toss lightly with dressing when ready to serve.
Save remaining dressing (for up to a week), it is good enough that you will likely want to use it again.

Notes

* candied pecans can be purchased- Killer Pecans are excellent but expensive. Trader Joes also sells candied pecans at a more reasonable price. The candied pecans are worth finding because they are an important element to this salad.
