Fall Comfort Food: Roasted Pumpkin Soup

Rx for a rainy Saturday: A Dallas Farmers Market Cooking Class taught by Chef Chad Houser.  Formerly of Parigi Restaurant, Chef Houser is now focusing solely on his dream to combine his culinary talents with his desire to help others as Executive Director and Executive Chef of Cafe Momentum - a noteworthy cause to help underprivileged young people achieve their full potential. (I could go on for days about this but am afraid I might not do the cause justice. I recommend that you read more via the link. Spoiler Alert: you will be very moved by what you read…amazing stuff…)

Chef Houser passionately told us about Cafe Momentum as he demonstrated creative fall dishes. It was amazing to watch him focus on his audience as he skillfully and intuitively tended to the many details that resulted in five wonderful dishes for 50-60 people – he didn’t skip a beat. This Chef is talented, inspiring and incredibly thoughtful.  Easy to see why he has had such a loyal following. Here is his Roasted Pumpkin Soup, Which he garnished with candied bacon… Ah-mazing!!

Delicious for the fall weather.  Try it and let us know how you like it!
